Baked trout with rosemary potato chips

Here’s a guilt free recipe for fish and chips, that’s sure to have you licking your lips! Recipe compliments of The Wonderful World of Food – a Beyond Fitness client’s blog.

Approx. time: 45 mins

Ingredients

  • 4 trout fillets (ideally fresh & deboned)
  • Potatoes: 4 white potatoes and 4 sweet potatoes
  • 2 sprigs of rosemary (though dried is fine too)
  • 1 Lemon
  • Salt & pepper
  • Nutmeg
  • Olive oil (extra virgin)

Method

Chips

  1. Pre-heat the oven to 200 degrees celcius
  2. Peel and cut the potatoes into chips (any thickness you like)
  3. Lay out the potatoes and rosemary onto a baking tray
  4. Drizzle with olive oil and nutmeg
  5. Bake in the oven til golden and cooked inside (approx. 15-20 mins)
  6. Add salt &/or pepper as you like.

While the chips are cooking…

Fish

  1. Place trout on a piece of foil
  2. Drizzle with lemon, parsley, pepper and olive oil – add a slice of lemon in the middle
  3. Wrap trout in foilArrange on a baking tray and cook for approx. 10 mins (until light pink, slightly translucent inside)
  4. Let the trout rest for 5 mins.

Serve it all up with a slice of lemon on the side.

Enjoy with a nice glass of your favourite white wine, or a non-alcoholic grape juice for the kids ;p
